The French Chef Season 1, Ep 14 “Chocolate Mousse”

Foamy

Mousse = foamy
Mousseline = even more light and foamy

On Liqueur

When using liqueurs, be sure and use a good quality liqueur. Why? Because you can taste the quality. If it is not good don’t use it and instead use orange juice or strong coffee to get the flavor you are going for.

Whipped cream pro-tip

It is possible to make whipped cream ahead of time. After whipping your cream, simply line a sieve with cheesecloth and set into a bowl. Now pour/scoop the whipped cream into the sieve, cover and put into the fridge.

Lessons from Julia is a weekly series where I post what I am learning from watching episodes of The French Chef with Julia Child starting at season 1, episode 1.
